12 low-fat vanilla wafers
12 ounces fat-free cream cheese, softened
3 ounces baking white chocolate, melted and cooled slightly
1/2 cup sugar
1/4 cup skim milk
1 1/2 teaspoons vanilla extract
1 egg white, lightly beaten
3 strawberries, sliced
1 kiwi, sliced
Preheat an oven to 350 degrees F and place twelve foil baking cups into a muffin pan. Place one vanilla wafer into the bottom of each cup, flat side down.
Beat the cream cheese with an electric hand mixer on medium speed for 30 seconds. Add in the white chocolate, sugar, milk, vanilla, and beaten egg white, mixing thoroughly.
Fill the muffin cups about three-quarters full with the batter and bake 20 minutes or until cheesecakes are set. Remove and cool in the pan for 10 minutes, then remove each cheesecake and cool for one hour.
Garnish with sliced fruit if desired.
