1 onion, diced
2 cups baby spinach
1 tomato, chopped
1/2 cup cheddar cheese, shredded
5 eggs
5 egg whites

Heat an oven to 350 degrees F.
In a skillet, melt the butter on medium heat and sauté the onions until caramelized, about 10 minutes.
Add the spinach to the skillet, stirring until the spinach wilts. Remove from heat and add the chopped tomato. Evenly distribute this mixture in a muffin pan and sprinkle half of the cheddar cheese on top.
In a small bowl, whisk the eggs and egg whites. Add salt and pepper. Evenly distribute this over the onion and spinach mixture, adding another layer of cheese.
Bake for 15 minutes or until the eggs are set.
