1 tablespoon canola oil
1 large onion, chopped finely
1 garlic clove, crushed
1 teaspoon cumin seeds
1 teaspoon fenugreek seeds
2 teaspoons garam masala
1 tablespoon lime juice
1 pound fresh spinach, trimmed and chopped
6 ounces cream
7 ounces paneer cheese, cubed
Sauté the onion, garlic, and spices in oil in a frying pan until brown.
Add the spinach and the lime juice and cook until the spinach has wilted.
Add the mixture to a blender jar and blend for 1 minute.
Transfer the mixture back to the frying pan and stir while adding cream.
Add the paneer cubes and cook over low heat for 5 minutes.
Serve with steamed rice or naan.
