1 cup white vinegar
¼ cup lime juice
½ cup water
¼ cup light brown sugar
2 tablespoons yellow mustard seeds
3 papaya, seeded, peeled, and chopped
2 teaspoons curry powder
¼ cup red onion, diced
Put the mustard seeds, light brown sugar, water, lime juice, and white vinegar into a saucepan. Bring to boil and cook for 5-10 minutes.
Add the curry powder and papaya to the mixture and cook for 2 more minutes. Remove from heat and stir in the red onion. Pour the mixture in a jar and refrigerate for 1 week before using.
