1 cup canned unsweetened coconut milk
3/4 cup milk
3 tablespoons sugar
2 tablespoons tapioca
1/2 teaspoon vanilla extract
2 large papayas, seeded and peeled
In a medium saucepan add the coconut milk, milk, sugar, and tapioca together. Boil then reduce to low heat, stir occasionally for about 5 minutes.
Remove from heat and stir in the vanilla extract. Cover the mixture and refrigerate for 1 hour
Cut the papayas in half and add them to a blender. Puree.
Add the papaya puree and pudding together and serve immediately or continue to chill.
