6 medium potatoes, peeled and sliced into 1/4-inch pieces
1 medium onion, sliced
1/3 cup butter, melted
1/2 teaspoon salt
1/4 teaspoon chili powder
1/8 teaspoon cayenne pepper
1/8 teaspoon black pepper
2 1/2 cups pepper jack cheese, shredded
Preheat an oven to 400 degrees.
Mix together the potatoes and onions in a bowl.
Combine the butter and spices. Pour the mixture over the potatoes and onions and toss to coat.
In a flat-bottomed 2-quart cooking dish, spread half of the potato mixture, then add half of the cheese and repeat procedure with the rest of the potatoes and cheese.
Bake, uncovered, for 40-45 minutes.
