1/2 cup balsamic vinegar
1/4 cup honey
2 cloves finely chopped garlic
2 teaspoons chili pepper
2 teaspoons curry powder
1 teaspoon ground cumin
1 teaspoon ground ginger
1 teaspoon mustard seeds
1/2 teaspoon salt
2 tablespoons extra-virgin olive oil
2 unripe, peeled, and chopped mangoes
Heat all ingredients except the mango and olive oil in a saucepan on medium-high heat and bring to a boil.
Reduce heat to medium and simmer, stirring occasionally until thickened, about 5 minutes.
Remove from heat and stir in the olive oil.
Add the mango and stir well, coating each piece with the mixture.
Set aside to cool. When cool, refrigerate for 8 hours or overnight.
