5 egg whites, room temperature
1/8 teaspoon salt
2 cups unsweetened, shredded coconut
1 cup finely chopped, sweetened dried pineapple
1 cup white chocolate chunks
1 teaspoon vanilla extract
Line a baking sheet with parchment paper. Preheat an oven to 350°F.
With an electric mixer, beat the egg whites and salt on medium speed for about 2 minutes or until stiff peaks are formed.
Add the pineapple, coconut, white chocolate, and vanilla, mixing well.
Scoop small portions of about two tablespoons each onto baking sheets, placing them approximately 1 inch apart.
