1 package yellow cake mix
1 can (11 ounce) mandarin oranges with juice
4 egg whites
1/2 cup unsweetened applesauce
Cooking spray
1 can (20 ounce) crushed pineapple with juice
1 package vanilla-flavored instant pudding mix
1 cup low-fat whipped topping
Preheat an oven to 350 degrees F
Beat together the cake mix, oranges, egg whites, and applesauce in a mixing bowl for about 2 minutes, or until smooth.
Coat a baking dish with cooking spray and pour in the mix.
Bake for about 25-30 minutes or until a toothpick comes out clean when inserted in the middle of the cake.
When the cake has cooled, combine the pineapple, vanilla pudding mix, and whipped topping in a bowl. Mix thoroughly and spread over the cake. Refrigerate before serving.
