1 1/2 cups fresh mint leaves
1/3 cup unsalted shelled pistachios
2 cloves garlic, crushed and peeled
2 tablespoons extra-virgin olive oil
2 tablespoons lemon juice
2 tablespoons low-fat plain yogurt
1/8 teaspoon salt
Chop the first three ingredients (mint leaves through garlic) in a food processor. In a small bowl, mix the olive oil, lemon juice, and yogurt. While the food processor motor continues to run, gradually add the oil mixture. Continue to puree the mixture until a paste forms. Add salt, if desired, and use immediately to season soup or meat.
