3/4 cup plus 2 tablespoons white sugar
10 (about 4 cups) fresh Santa Rosa plums, sliced and seeded
2 tablespoons cornstarch
1/4 teaspoon ground cinnamon
1 cup (110 grams) all-purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 cup (50 grams) butter
1/4 cup (60 milliliters) milk
1 egg, lightly beaten
Preheat oven to 350°F.
Add 3/4 cup of white sugar the next three ingredients (plums through cinnamon) to a large bowl, and toss to combine. Transfer the mixture to a 2-quart casserole.
Mix the remaining sugar, as well as the flour, baking powder, and salt in a medium bowl. Slide the butter into 1/2 inch cubes, and add to the flour mixture. Using a fork or pastry blender, cut the butter in until coarse crumbs begin to form. Add the last two ingredients to the mixture, stirring until just combined.
Place the batter on the fruit in strips or drops. Transfer the casserole dish to the oven, and bake the cobbler for 35 minutes. Serve immediately.
