4 boneless skinless chicken breast halves (4 ounces each)
1 1/2 cups water
1 cup diced onion
1/2 cup dry white wine
1/2 cup sliced celery
1/2 cup sliced carrot
10 black peppercorns
4 sprigs fresh parsley
4 sprigs fresh thyme
2 bay leaves
Add all of the ingredients to a large saucepan and bring the water to a boil.
Decrease the heat and allow it to simmer until the chicken is completely cooked (10-15 minutes).
Remove the saucepan from the stove and allow to sit in the poaching liquid for 10-15 minutes before serving.
If desired, chicken can be stored for a later time. To do this, allow the saucepan to cool for approximately 20 minutes. Then, put the chicken along with the poaching liquid into freezer bags for a later date.
