4 tablespoons olive oil, divided
1 large onion, minced
1 clove garlic, minced
5 potatoes, peeled and sliced thin
6 ounces linguiƧa sausage, sliced thinly
2 1/2 teaspoons salt
3 tablespoons ground black pepper
1 pound kale, rinsed and cut in thin strips
Water
Heat three tablespoons of the olive oil in a saucepan. Add the onion and garlic and cook for three minutes. Add the potatoes, stirring constantly for another three minutes.
Add four cups of water and bring to a boil. Reduce heat and simmer, covered, for 20 minutes.
Cook the sausage in a large skillet over medium heat for 10 minutes or until thoroughly cooked. Drain all fat.
Mash or puree the potato mixture in a blender. Add the sausage, salt, and pepper and return to medium heat. When it boils, cover and simmer for five minutes.
Just before serving, add the kale and simmer for five minutes until tender. Stir in the remaining olive oil and serve immediately.
