5 medium sized potatoes
1 egg
4 egg whites
1 teaspoon salt
3 cups sifted flour
1/2 cup plain croutons
In a large pot, boil the unpeeled potatoes until tender. Drain the water from the pot and peel the potatoes. Grate the potatoes into a large mixing bowl.
Combine the eggs and salt with the potatoes in the mixing bowl. Slowly add flour until the dough is slightly sticky but still able to easily be handled. Adding too much flour creates heavy dumplings.
Mold the dough around 2-3 croutons per dumpling. Ideally, they should be slightly larger than the size of a golf ball.
Boil a large pot of water and then add the dumplings. Cook the dumplings for 10 minutes, or until they are floating on top of the water.
