1 roasted chicken
½ cup barbecue sauce
1 cup canned black beans, rinsed
½ cup frozen corn, thawed
¼ cup reduced-fat sour cream
4 leaves romaine lettuce
4 10-inch whole wheat tortillas
2 limes, cut into wedges
Discard the skin from the roast chicken and remove and shred the meat to yield about four cups.
In a skillet over medium-high heat, cook the chicken, barbecue sauce, beans, corn, and sour cream until heated through, about five minutes. Remove from heat and set aside.
Lay a lettuce leaf in the center of a tortilla and layer filling on top. Roll into a burrito, and repeat with other tortillas. Serve with lime wedges.
