Ingredients

  • 1 clove garlic, smashed

  • 3 tablespoons mayonnaise

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice, fresh

  • 1 pinch cayenne pepper

  • 1 cup chicken, cooked and chopped

  • 1/3 cup fennel, diced

  • 3 tablespoons sweet onion, chopped

  • 2 tablespoons pine nuts, toasted

  • 2 tablespoons raisins

  • 2 tablespoons flat-leaf parsley, chopped

  • Kosher salt to taste

  • Black pepper to taste

Directions

  • Make a garlic paste by mashing the garlic with a pinch of Kosher salt.

  • Combine the garlic paste, mayonnaise, olive oil, lemon juice, and cayenne in a bowl to make dressing.
