8 slices Italian bread
4 ounces thinly sliced prosciutto
1 1/4 cups Fontina cheese, shredded
1/2 cup baby arugula leaves
1/4 cup fig preserves
Olive oil-flavored cooking spray
Turn on a panini grill and allow to preheat.
On four of the eight bread slices, place equal amounts of prosciutto, Fontina cheese, and arugula.
On the remainder of the bread slices, spread one tablespoon fig preserves on one side in equal amounts.
Use cooking spray to coat both outer sides of the sandwiches before placing on the panini grill.
Leave sandwiches on the grill for three minutes. They should be golden brown and cheese should have melted when removed from heat.
