1/4 cup fig preserves
1 tablespoon lemon juice
1/4 teaspoon peeled and grated fresh ginger
1/3 cup soft goat cheese
4 slices wheat bread, toasted
1 cup loosely packed arugula
2 ripe plums, cut into thin wedges
3 ounces thinly sliced prosciutto
Whisk together the fig preserves, lemon juice, and ginger in a bowl and set aside.
Spread an equal amount of goat cheese on one side of each bread slice.
On top of the goat cheese, add an even amount of arugula, plum wedges, and prosciutto on each slice of bread.
Use one tablespoon of fig, lemon, and ginger mixture to top each sandwich evenly.
Serve sandwiches open faced.
