Ingredients

  • 1 cup quinoa

  • 2 cups water

  • 2 cups apple juice

  • 1 cup raisins

  • 2 tablespoons lemon juice

  • 1 teaspoon ground cinnamon, or to taste

  • Salt to taste

  • 2 teaspoons vanilla extract

Directions

  • Rinse and drain the quinoa.

  • Place water and quinoa in a medium saucepan and bring to boil. Cover, lower heat, and simmer until all water is absorbed, about 15 minutes.

  • Add the apple juice, raisins, lemon juice, cinnamon, and salt. Mix, cover, and let simmer for 15 minutes more.

  • Mix in vanilla extract just before serving.
