1 cup quinoa
2 cups water
2 cups apple juice
1 cup raisins
2 tablespoons lemon juice
1 teaspoon ground cinnamon, or to taste
Salt to taste
2 teaspoons vanilla extract
Rinse and drain the quinoa.
Place water and quinoa in a medium saucepan and bring to boil. Cover, lower heat, and simmer until all water is absorbed, about 15 minutes.
Add the apple juice, raisins, lemon juice, cinnamon, and salt. Mix, cover, and let simmer for 15 minutes more.
Mix in vanilla extract just before serving.
