2 cups cooked brown rice
2 cups skim milk
1/2 cup dried cranberries
2 tablespoons light brown sugar
1 teaspoon lemon zest
1/8 teaspoon cinnamon
In a medium-sized saucepan, bring the rice, milk, and cranberries to a boil.
Reduce heat and simmer uncovered until the cranberries are softened.
Remove from heat and stir in the sugar, lemon zest, and cinnamon. Allow to cool. May be served warm or chilled.
