1 1/2 cups old-fashioned rolled oats
1/2 cup whole wheat flour
1/2 cup roughly chopped walnuts
1/4 cup semi-sweet chocolate chips
2 tablespoons cinnamon chips
2 tablespoons sweetened coconut flakes
1/4 cup mix of dried berries and cherries
1/4 cup sunflower seeds
1/4 cup brown sugar
2 tablespoons ground flaxseeds
1/2 teaspoon salt
1/4 teaspoons baking soda
1 1/2 cups milk
1 egg
1 teaspoon vanilla extract
Preheat oven to 350°F.
Line a 9×13 inch baking dish with parchment, leaving 1″ of parchment on either side of the dish.
In a bowl, stir together the ground flax seeds, baking soda, oats, chocolate and cinnamon chips, dried berries, dried cherries, sunflower seeds, whole wheat flour, walnuts, brown sugar, and salt.
In a separate bowl, whisk the milk, egg, and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients and stir until well combined.
Transfer the mixture into the baking dish, and smooth into an even layer.
Bake for 30 minutes, or until the bars are set and golden brown.
Cool in pan for 10 minutes, then remove with the parchment paper and cut into 10 equally-sized bars.
