1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
4 egg whites
1 cup sugar
1/4 cup unbleached, all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup mini chocolate chips (semi-sweet)
Butter-flavored cooking spray
Set the temperature of the oven to 350°F. Using the cooking spray, coat an 8 x 8 inch non-stick pan.
Add the applesauce, vanilla, egg whites, and sugar in a mixing bowl. Mix the ingredients with a whisk or spatula so they are well combined.
Next, put the flour, cocoa powder, baking powder, and salt in the mixture and stir. Do not over stir, just until the mixture has combined and there are no lumps. Pour the batter into the non-stick pan.
Top off the brownie batter with and even layer of chocolate chips. Place the brownies in the preheated oven, and bake for 20-22 minutes. Brownies are done baking when a toothpick inserted into the brownies pulls out clean.
Cool the pan on a cooling rack for 5 minutes. Cut the brownies into 12 pieces.
