1/2 cup dry oatmeal
1/2 cup fat-free cottage cheese
4 egg whites
1/2 teaspoon baking powder
1/2 teaspoon vanilla extract
1 packet artificial sweetener
Blend everything except the oats. Once you have a smooth liquid, add the oats, and blend for only a little bit, so the batter is a little bumpy. Let the batter sit for a couple of minutes to thicken up a bit.
Cook it in a pan coated with non-stick cooking spray.
Top with your favorite sugar-free syrup.
