12 large egg whites
1/4 cup millet flour
1/4 cup tapioca flour
1/4 cup white rice flour
1/4 cup sweet rice flour
1/4 teaspoon xanthan gum
1 teaspoon cream of tartar
1/4 teaspoon salt
3/4 cup sweetener
1 tablespoon vanilla extract
1 teaspoon lemon juice
Beat the egg whites until frothy.
Beat in the cream of tartar, salt, sweetener, vanilla, and lemon juice.
Combine all types of flour with the xanthan gum and then fold this mixture into the liquid mixture.
Pour into cake pan.
Bake at 325 degrees F for 50 minutes.
