Ingredients

  • 1 tablespoon butter

  • 1 cup uncooked quinoa

  • 2 cups vegetable broth

  • 2 teaspoons chopped garlic

  • 2 tablespoons chopped fresh parsley

  • 1/2 tablespoon chopped fresh thyme

  • 1/4 teaspoon salt

  • 1 small onion, finely chopped

  • 1 dash fresh lemon juice (optional)

Directions

  • Place the butter in a saucepan and melt it over medium heat. Then, put the quinoa in the saucepan and stir it occasionally. Sauté the quinoa until lightly brown, which should take about 5 minutes.

  • Add the broth and bring the mixture to a boil. Cover the mixture, and reduce the heat to a simmer. Cook until the quinoa is tender or about 15 minutes.

  • Place the quinoa in a bowl and mix with garlic, parsley, thyme, salt, and onion. Drizzle with some lemon juice, if desired. Serve immediately.
