1/2 cup margarine, softened
1/4 cup granulated sugar
1/4 cup dark brown sugar, packed
1/4 cup applesauce, unsweetened
1 egg white
1 cup whole wheat flour
1 cup old fashioned oats
1/3 cup wheat bran
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon cinnamon
1 orange, zested
1 tablespoon orange juice
Preheat an oven to 350 degrees Fahrenheit.
Cream the margarine using an electric mixer in a medium mixing bowl.
Slowly add the granulated and brown sugars to the bowl and continue to mix for 2-3 minutes.
Add the applesauce and egg white to the mixing bowl, and combine.
Sift the dry ingredients together in a separate mixing bowl. Add the dry ingredients to the bowl of wet ingredients, along with the orange juice and zest.
Line two cookie sheets with parchment paper and place the dough on the paper one tablespoon at a time.
Bake for 10 minutes, or until the bottom of the cookies are lightly browned. Let the cookies cool on a wire rack.
