1 cup quinoa, cooked
3 cups black beans, cooked (can use two 15 ounce cans, drained and rinsed)
2 large sweet potatoes, shredded
1 cup cheddar cheese, shredded, low-fat
1 tablespoon cumin, ground
2 eggs
1 cup salsa
2 tablespoons cilantro, fresh, chopped for garnishing
Pinches of salt and black pepper
Set an oven to preheat to 350°F and spray 9x9-inch casserole dish with nonstick spray.
In a large mixing bowl, add the black beans, quinoa, shredded sweet potatoes, 1/2 cup of shredded cheese, salt, pepper, and cumin and mix well. In another bowl, mix the salsa and eggs.
Combine the salsa mixture with the vegetables and pour the final mix into the casserole dish.
Add the remaining 1/2 cup of cheese on top of the mixture and bake for about 30 minutes.
After 30 minute, remove from the oven and sprinkle the cilantro.
