4 whole wheat tortillas
1/4 cup fat-free cream cheese, softened at room temperature
12 spinach leaves, washed and dried
1/2 cup grated carrots
Use an electric mixer or whisk to whip the cream cheese. Spread the cream cheese over each tortilla. Sprinkle the spinach leaves and grated carrots on top. Firmly roll the tortilla and hold it in place using a toothpick.
To create pinwheels, cut each tortilla in half and then cut each half into bite sized pieces. Arrange pieces on a serving plate.
