Ingredients

  • 4 whole wheat tortillas

  • 1/4 cup fat-free cream cheese, softened at room temperature

  • 12 spinach leaves, washed and dried

  • 1/2 cup grated carrots

Directions

  • Use an electric mixer or whisk to whip the cream cheese. Spread the cream cheese over each tortilla. Sprinkle the spinach leaves and grated carrots on top. Firmly roll the tortilla and hold it in place using a toothpick.
