1 roasted chicken
1 1/2 teaspoons canola oil
1 onion, minced
2 teaspoons curry powder
15 ounces canned lentils, rinsed
14 ounces canned tomatoes, diced
1/4 teaspoon salt
1/4 cup low-fat plain yogurt
Prepare the chicken by discarding the skin and removing the meat from bones. Dice the meat.
Heat the oil in a large saucepan and add the onion, stirring until soft. Add the curry powder and stir about 20 seconds.
Add the lentils, tomatoes, chicken, and salt, stirring well until heated through.
Remove from heat and stir in yogurt.
