12 oz shrimp, raw
1 large cucumber, diced
4 tomatoes, diced
4 large shallots, peeled and sliced
3 cloves garlic, crushed
½ cup lime juice
1ounce lemon juice
1 bunch of cilantro, chopped
1 yellow bell pepper, diced
1 teaspoon crushed red pepper flakes
Salt, to taste
In a large bowl, combine the raw shrimp with the salt, garlic, cilantro, and lime juice. Cover with plastic wrap and chill for 4 hours.
In a small bowl, place the shallot slices. Cover with warm water and salt and let sit for 10 minutes. Drain and rinse.
Add the shallots and all remaining ingredients into the shrimp mixture, mix well, and refrigerate for 30 minutes before serving.
