3 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons fresh lime juice
2 teaspoons tequila
1/4 teaspoon ground cayenne pepper
3 tablespoons fresh chopped cilantro
1/4 teaspoon salt
1 pound shrimp, peeled and deveined
In a mixing bowl, add the olive oil, garlic, lime juice, tequila, red pepper, cilantro, and salt and mix thoroughly. Add the shrimp and toss until the shrimp is well coated. Marinate the shrimp in the refrigerator for 30 minutes.
Soak four bamboo skewers in water for at least 20 minutes.
Remove the shrimp from the refrigerator and thread onto the pre-soaked skewers. Preheat an outdoor grill to high heat, and use oil to coat the grate to prevent sticking. Discard the remaining marinade.
Grill for 2-3 minutes per side or until shrimp turn pink.
