1 cup sour cream
1/3 cup chopped fresh dill
3 tablespoons finely chopped onions
2 tablespoons Dijon mustard
Salt and pepper to taste
1 1/2 pounds center cut salmon fillets, with skin
2 teaspoons minced garlic
Mix the first four ingredients in a small bowl and add salt and pepper to taste. Blend well.
Allow to stand at room temperature for one hour.
Preheat an oven to 400 degrees F.
Place the salmon on a lightly greased baking sheet, skin side down. Sprinkle with garlic, salt, and pepper. Add 1/3 of the sauce on top.
Bake for 20 minutes. It should be opaque in the center when cooked.
Serve with the remaining sauce.
