2 15-ounce cans black beans
2 cups chicken broth or vegetable broth
1 cup salsa
2 teaspoons cumin
1/2 cup chopped onion
1/4 cup lime juice
1 teaspoon olive oil
Chopped cilantro for garnish
In a medium skillet, heat the olive oil over medium heat.
Add the onions and sauté until tender. Remove from heat and set aside.
Add the broth, salsa, cumin, lime juice, and one can of black beans into a blender and puree until smooth.
Combine the onions and pureed mixture in a medium pot over medium heat. Add the remaining can of black beans. Cook until thoroughly heated.
Serve warm and top with cilantro for garnish.
