1/2 cup plump golden raisins
1 tablespoon olive oil
1/2 cup pine nuts
2 cloves garlic, crushed
1 1/4 pounds baby spinach leaves
2 tablespoons lemon zest, freshly grated
Salt and pepper to taste
Place the raisins in a bowl and pour boiling water over them until just covered. Let sit for 5 minutes. Drain thoroughly, then set aside.
Heat the oil in a large skillet over medium-high heat, then add the pine nuts, and sauté until they turn golden. Add the garlic, and sauté for an additional minute. Stir in the raisins, then add the spinach leaves. Stir the ingredients until the spinach has wilted, about 1 minute.
Remove from the heat and add the lemon peel. Season with salt and pepper to taste.
