2 lbs baby-cut carrots
1 medium onion, cut in half and sliced
1/4 teaspoon salt
1/3 cup honey
1/3 cup apricot preserves
2 tablespoons chopped, fresh parsley
Add the carrots, onion, and salt to a slow cooker.
Cover and cook on low heat setting for 9-10 hours.
Drain the liquid from the slow cooker. Mix the honey and preserves in small bowl and pour over the carrots.
Increase the heat to high. Cover and cook 10-15 minutes or until hot. Garnish with parsley before serving.
