Ingredients

  • 2 lbs baby-cut carrots

  • 1 medium onion, cut in half and sliced

  • 1/4 teaspoon salt

  • 1/3 cup honey

  • 1/3 cup apricot preserves

  • 2 tablespoons chopped, fresh parsley

Directions

  • Add the carrots, onion, and salt to a slow cooker.

  • Cover and cook on low heat setting for 9-10 hours.

  • Drain the liquid from the slow cooker. Mix the honey and preserves in small bowl and pour over the carrots.
