2 pounds (32 ounces) chicken breasts, boneless and skinless
1 cup salsa
1/2 cup water
1 cup petite diced canned tomatoes, low-sodium
2 tablespoons taco seasoning
1 cup onions, diced fine
1/2 cup celery, diced fine
1/2 cup carrots, shredded
3 tablespoons reduced fat sour cream
In a bowl, combine the tomatoes, onions, celery, and carrots and set aside.
Place the chicken in a slow cooker and sprinkle with taco seasoning.
Layer the vegetable mixture and salsa on top of the seasoned chicken.
Pour the water over the mixture and set the slow cooker on low. Cook for 6-8 hours.
The chicken is cooked when it breaks apart easily into shredded chicken.
When serving, break up chicken and stir in sour cream.
