4 slices bacon, cut into 1/2-inch pieces
2 pounds turkey breast tenderloins, cut into 1-inch slices
3/4 cup barbecue sauce
2 tablespoons taco seasoning mix
8 flour tortillas
1 avocado, pitted, peeled, and mashed
2 cups shredded lettuce
1/2 cup drained roasted bell peppers, diced
In a nonstick skillet, cook the bacon over medium heat for 4-6 minutes until almost crisp. Add the turkey slices and cook until brown on all sides.
Place the bacon and turkey into a slow cooker. Top with the barbecue sauce and taco seasoning mix. Mix well. Cover and cook on the low heat setting for 5 hours.
Lay each tortilla on a flat surface. Layer the cooked bacon and turkey mixture, mashed avocado, lettuce, and chopped peppers on top of each. Roll the tortillas and serve immediately.
