1 1/2 pound skinless turkey thighs
1 butternut squash, peeled, seeded, and cut into 1 1/2-inch pieces
1 medium onion, sliced
1 can (16 ounce) baked beans, undrained
1 can (14.5 ounce) diced tomatoes, undrained
2 tablespoons chopped fresh parsley
In a slow cooker, combine all ingredients except parsley. Cover and cook on the low setting for 8 hours.
Remove the turkey from the slow cooker and place on a cutting board. Remove meat from the bones and return the turkey meat to the slow cooker. Stir well and serve hot and garnished with parsley.
