1 pound extra lean ground beef
1/2 cup tomato paste
4 cups onion, chopped
4 cups green bell pepper, chopped
4 cups red bell pepper, chopped
1 cup fresh tomatoes, chopped
2 teaspoons mustard, low sodium
4 teaspoons ground black pepper
2 teaspoons cayenne pepper, chopped
2 cloves garlic, chopped
2 scallions, chopped
2 teaspoons ground ginger
8 teaspoons ground nutmeg
1 teaspoon orange zest, grated
2 teaspoons thyme
4 cups bread crumbs
Preheat an oven to 350ºF.
Combine all ingredients and mix well.
Form into a loaf shape and place into a 1-pound loaf pan (with drip rack if available).
Cover with aluminum foil and bake for 50 minutes, then remove foil and continue baking for 10 minutes.
Remove from oven and let stand a few minutes before slicing.
