1 head of cauliflower, chopped
1/4 cup dry skim powdered milk
3 tablespoons flour
1/4 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon cayenne pepper
1/8 teaspoon coarse ground black pepper
1 1/2 cups skim milk
1/3 cup shredded low-fat cheddar cheese
1 tablespoon Dijon mustard
Steam the cauliflower for 3-4 minutes. Place into a medium saucepan and add the dry milk powder, flour, salt, garlic, oregano, basil, cayenne pepper, and black pepper.
Stir well over medium heat and slowly whisk in the skim milk. Continue stirring for 5 minutes until the contents are thoroughly mixed.
Add the cheddar cheese and cook until melted. Whisk in the mustard. Place the cauliflower on a serving plate and pour the sauce on top. Serve.
