1 16-ounce package chopped frozen spinach, thawed and drained
1/2 cup minced onion
1/4 cup chopped green onion
2 14.5-ounce cans creamed corn
1 tablespoon canola oil
2 teaspoons vinegar
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup toasted bread crumbs
2 tablespoons grated Parmesan cheese
Preheat an oven to 400°F.
In a casserole dish, mix together the spinach, onions, creamed corn, canola oil, vinegar, salt, and black pepper.
Spread bread crumbs and Parmesan cheese over top of the vegetable mix and bake for 30 minutes.
