1 medium onion, diced
6 ounces fresh baby spinach
2 large eggs
1/2 cup egg substitute
1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Pinch of cayenne pepper
1 1/3 cups skim milk
1/2 cup feta cheese
Preheat an oven to 400°F.
Coat a 10 inch circular pan or pie dish with cooking spray.
Coat a skillet with cooking spray and cook the onion over medium heat until the onions are translucent.
Add the baby spinach to the skillet and cook until wilted. Remove the onions and spinach from heat and set aside to cool.
Crack the eggs into a large mixing bowl and whisk in the flour, baking powder, and salt. Add the milk and vegetable mixture to the eggs. Stir to combine.
Pour the mixture into the pie dish and sprinkle the feta cheese on top.
Bake in the oven for 25 minutes or until the center is set and the edges are golden brown.
When ready, remove the quiche from the oven and let set for 5 minutes before serving.
