1 pound potatoes, peeled and cubed
3 cloves garlic, minced
1/2 cup onion, diced
1 teaspoon ground ginger
1/4 cup vegetable broth
1 cup frozen peas
1 teaspoon lemon juice
1 teaspoon ground turmeric
1 tablespoon coriander seeds
1 teaspoon curry powder
16 wonton wrappers
Heat an oven to 350 degrees F.
In a pan, sauté the potatoes, onion, garlic, and ginger. Add the vegetable broth and cook for 10 minutes, covered.
Add the peas, lemon juice, tumeric, coriander, and curry powder. Stir for a few minutes until the peas are cooked.
Evenly place the potato filling on to the wrappers. Fold the wrapper into a triangle shape and use a fingertip to add water and seal the sides.
Place on a cookie sheet and bake for 15 minutes or until golden brown.
