1 cup all-purpose flour
2/3 cup whole wheat flour
1/4 teaspoon salt
2 1/2 teaspoons baking powder
2 tablespoons white sugar
1 1/2 cups buttermilk
2 small ripe bananas, finely chopped
Cooking spray
Combine both flours, salt, baking powder, and sugar in a large bowl. Mix the ingredients together, and then add the buttermilk and bananas. Stir the mixture only until the dry ingredients become moist.
Coat a griddle or frying pan with cooking spray. Put the griddle or frying pan over medium heat.
Pour three or four 1/4 cup portions of the batter onto the griddle or frying pan. Cook both sides of the pancakes until they are light brown. Repeat this last step until all batter has been cooked. Serve immediately.
