1 tablespoon vegetable oil
1 small onion, chopped
1/2 head (3-4 cups) cabbage, chopped
1 large potato, peeled and diced
Two 14 1/2 ounce cans of low-sodium, fat-free chicken broth
Two 15 ounces cans of cream-style corn
1 cup lean (8% fat) ham, chopped
1/2 teaspoon black pepper
1/2 cup cheddar cheese, grated
Add the oil to a large pot, and heat over medium heat. Add the onions, cabbage, and potato to the pot, and sauté for approximately 10 minutes or until the ingredients soften.
Add the broth, corn, ham, and pepper to the pot. Cover, reduce heat slightly, and allow the soup to simmer for approximately 10 minutes or until the potatoes become tender.
Using a ladle, scoop 1 cup portions of soup into individual bowls, top with cheese, and serve hot.
