1 tablespoon whole coriander seeds
¼ cup honey
5 tablespoons soy sauce
2 teaspoons fresh lemon juice
4 salmon fillets, skinned
2 teaspoons vegetable oil
Toast the coriander seeds on medium-high heat until golden.
Remove and grind the seeds in a coffee or spice grinder.
Combine the coriander seeds, honey, soy sauce, and lemon juice in a small bowl. Brush some of this mixture on each salmon fillet, saving the rest of the glaze for later.
Add the oil to a skillet over medium-high heat and cook the salmon fillet for 1 minute. Turn the fillet and cook the other side for 2 minutes.
Turn the temperature down to medium-low and turn the fillet once more. Cook for 3 minutes, or until desired texture.
Pour the glaze mixture into the skillet with the salmon and allow the glaze to thicken for 1-2 minutes.
