1/2 teaspoon salt, divided
4 4-ounce boneless pork chops
3 tablespoons all-purpose flour
2 tablespoons extra-virgin olive oil
1 medium shallot, minced
1/2 cup brandy
1/4 cup reduced-fat sour cream
Prepare the pork by trimming and ensuring a 1/2-inch thickness.
In a bowl, add the pepper and 1/4 teaspoon salt. Sprinkle the combination onto each side of the pork chops.
In a shallow dish, add the flour. Cover each chop thoroughly and remove any excess by shaking.
Over medium-high setting, heat the oil in a large skillet.
Reduce heat to medium and add pork. Cook the pork until browned, about 2-3 minutes per side. Move the cooked pork to a plate and cover with foil to keep warm.
Decrease the heat to medium-low and add the shallots, stirring until softened (about 1 minute). Add the brandy to the skillet and stir until most of the brandy has evaporated.
Remove the skillet from heat and stir in sour cream and remaining salt.
Serve cooked pork with the prepared sauce.
