1 teaspoon salt
1/2 teaspoon cayenne pepper
1 pound chicken breast, boneless, skinless, cut into 1 1/2-inch pieces
2 tablespoons canola oil
1 tablespoon curry powder
1 medium onion, sliced
2 garlic cloves, minced
1 cup chicken broth
1/3 cup golden raisins
1 1/2 tablespoons tomato paste
1/4 cup cilantro, chopped
1/4 cup plain nonfat yogurt
Prepare a mixture of flour, salt, and cayenne pepper in a plastic bag or container. Coat the chicken pieces with this mixture.
In a large skillet, heat the oil over medium to high heat.
Cook the chicken in the oil until browned and then remove it from the skillet.
Add the curry powder, onion, and garlic to the skillet and cook for 2-3 minutes.
Add the chicken broth, raisins, and tomato paste and stir.
Add the chicken and cook uncovered for 10 minutes.
Garnish with cilantro and yogurt.
Serve with steamed white rice or naan.
