1/2 package whole-wheat penne pasta
2 cups water
3 tablespoons olive oil
1/2 red onion, chopped
2 large cloves garlic, minced
2 leaves Swiss chard, chopped
1 cup mushrooms, chopped
1/2 bell pepper, chopped (red, orange, or yellow)
2 handfuls cherry tomatoes, halved
2 tablespoons fresh oregano, chopped
1 handful black olives, pitted and chopped
1/2 cup feta cheese, crumbled
Salt and black pepper to taste
Cook the penne pasta in 2 cups of water according to package directions. Save 1 cup of water for later.
Heat two tablespoons of the olive oil in a skillet, then sauté the onion and garlic over medium heat for 2-3 minutes. Mix in the chard, mushrooms, and bell pepper, stirring for another 2-3 minutes. Add the tomatoes and oregano along with 1/2 cup of the reserved pasta water. Cover and increase the heat, simmering for 2 minutes.
Remove the skillet from heat and add the cooked pasta, olives, and feta cheese. Add the remaining tablespoon of olive oil and season with salt and pepper. If a more liquid consistency is desired, add the remaining pasta water. Serve immediately.
