1 package penne pasta
1/4 cup olive oil
1 bunch green onions, chopped
1 clove garlic, minced
1 cup cherry tomatoes, quartered
1/2 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup fresh basil, chopped
12 large black olives, halved
Salt and black pepper to taste
Cook the pasta according to directions on package until tender. Drain and set aside.
In a small pan, heat the olive oil. Cook the green onions in the olive oil for 2-3 minutes. Add the garlic and continue cooking for another 2-3 minutes.
Stir in the cherry tomatoes, cooked penne pasta, salt, and pepper. Heat through, add the cheeses, and stir. Add the basil leaves and olives and continue cooking until cheese is melted.
Serve immediately.
